Pawpaw Bread
This wonderful fruit bread is made from the largest edible fruit native to North America, the pawpaw. With a sweet, tropical flavor, pawpaw is often used in recipes calling for bananas.
Ingredients
1 3/4 cups unbleached flour
2 tsp baking powder
1/4 tsp salt
1/3 cup butter (softened)
2/3 cup white sugar
2 eggs
1 cup pawpaw pulp (seeds removed)
Directions
1. Oil an 8×4 loaf pan and preheat the oven to 350°F.
2. Using an electric mixer in a large bowl, cream together softened butter and sugar until fluffy (around 2 to 3 minutes).
3. Add the eggs, one at a time, beating well between each addition and scraping down the sides as needed.
4. Alternately, add Paw Paw pulp and flour mixture a little at a time. Combine well with a hand mixer. Don’t overmix at this point. Pour into the prepared 8×4 inch loaf pan.
5. Bake in a preheated oven for 45-55 minutes or until a tester inserted in the center comes out clean. Test when the top is cracked and turning golden.
6. Remove the pan from the oven and let it cool on a cooling rack for ten minutes. Remove loaf from the pan and cool completely.


Applesauce Bread
If you’re in the mood for applesauce, but want a little something more, this is the perfect recipe. For this delicious treat, Colette made her own applesauce using Gala apples in the crock pot. Wanting something more, she found Grandma Nadine’s recipe for applesauce bread which she remembered as being so moist it was almost like cake. Coconut oil is so nutritious and incorporates into almost any recipe. The sweet topping turns this bread into a dessert. Grab your favorite warm beverage and prepare to indulge.
Wet Ingredients:
½ cup melted coconut oil
1¼ cup applesauce
¼ cup milk
2 eggs
1 cup granulated sugar
Dry Ingredients:
2 cups flour
½ cup rolled oats
1 tsp baking powder
½ tsp baking soda
½ tsp cinnamon
1/4 tsp salt
Topping Ingredients:
6 TB brown sugar
6 TB chopped
3/4 tsp cinnamon
1/4 cup chopped pecans or chopped walnuts
Directions
1. Oil a 9×5 loaf pan and preheat the oven to 350°F.
2. In a large bowl, whisk together the oil, applesauce, milk, eggs and granulated sugar.
3. In a different large bowl, whisk together the flour, oats, baking powder, baking soda and spices.
4. Add the wet ingredients and the chopped nuts and stir to combine.
5. Pour the batter into the prepared loaf pan.
6. In a small bowl, stir together the topping ingredients until well combined. Sprinkle evenly over the bread batter.
7. Bake for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
8. Allow to cool for 10-15 minutes in the pan before removing and allowing to cool completely on a wire rack.
9. Wrap tightly in foil to store at room temperature for up to 3 days or freeze up to 3 months.
